GENERAL DESCRIPTION OF THE INSTALLATION:
The current installation is developed to be used for continuous high-temperature pasteurization of egg liquids. That provides long shelf life and premium quality on the products receipt without using preservatives and stabilizers added. Complete egg processing line are used on a small, medium and large size food industry enterprises.
The installation begins with egg washer machine and egg breaker machine or only with egg breaker machine. The egg breaker, breaks the eggs (all egg breaker machines have option to separate egg yolk from egg white). After egg breaking the raw liquid materials enters into collecting tanks 50 l and via centrifugal pumps, goes into the Storage tanks. From Storage tank with a centrifugal pump, the raw egg material via pipe enters into the Balance tank on an egg pasteurizer. Before entering into Balance tank, the raw egg liquid goes through a 0.5 mm automatic air filter to be refined from leftover shell particles. Afterwards, via the screw pump, the liquid flows enter into first section of the 2-section plate heat exchanger (PHE), where the liquid is heated up from the returned pasteurized product (recuperation). Then the liquid goes out from PHE and enters in rotor spinning heater (RSH), where it precisely heats up to the required set temperature. From the rotor spinning heater, the heated product goes for holding in holding tubes. The time it takes to stay in holding tube is called “”holding time”” and this time is a different for each product. For egg liquid mélange, this time is 180 sec. After holding tubes, the product again returns into plate heat exchanger, flowing through the first section (recuperation) and goes in second section called “” cooling section””. In the second section of the plate heat exchanger, via an external cooling system and pre-chiller, the final pasteurized product is precisely cool off to the required set temperature. The installation ends with the filling machine, where the final product is filling into a single bag or in container. Have option the final product to go for spray drying if needed.
